Vegan Chocolate-Raspberry Almond Bar

Ingredients
  • 2lb, 1oz Flour pastry
  • 4oz Super fine almond flour
  • 1lb, 6oz Rolled oats
  • 14 1/2oz Super fine granulated sugar
  • 11oz Light brown sugar
  • 2 1/2 tsp Baking powder
  • 1 tsp Kosher salt
  • 1lb 13 1/4oz margarine, cubed
  • 2 1/2lb Raspberry preserves
  • 1lb Mini vegan chocolate chips
Preparation
  1. In a bowl, combine the pastry flour, almond flour, oats, sugars, baking powder, and salt.
  2. Cut the margarine into the dry ingredients to form a crumb that will hold when compressed.
  3. Press 5 ½ lb of the dough into a greased full sheet pan. Reserve the remaining dough for topping.
  4. Bake the crust at 350°F for 10 minutes, or until lightly browned.
  5. Remove the crust and let it cool.
  6. Spread the preserves evenly over the crust.
  7. Sprinkle the chocolate chips over the preserves, following by crumbling 1 ½ lb of the remaining dough over the surface.
  8. Bake until the topping is golden brown, 18 to 20 minutes.
  9. Let cool and cut as desired.
  10. Note: You can drizzle the bar with chocolate after baking instead of melting the chips onto the surface.
